INTRODUCTION :-
Ø Chilli is known as the most valuable crop of India.
Ø Chilli is used as a main ingredient of various curries and chutneys, it is
also used in vegetables, condiments, condiments, sauces and pickles.
Ø The pungency in chili is due to the active ingredient
"capsaicin", an alkaloid.
Ø With high amounts of vitamin C and antioxidants, chilies have been found to
help prevent lifestyle diseases, including certain cancers and stomach ulcers.
Ø Chilli accounts for 20-30% of total Indian spices exports, valued at around
Rs. 400-500 crores. Oleoresin is an important product exported to European
countries.
